A Great Prepper Post “No Eggs”

So you want a dessert like cake or cookies and don’t have any eggs? There are some recipes out there just for this purpose. I’ll start out with chocolate cake.

Cocoa Cake
3 cups flour
2 cups sugar
1/2 cup cocoa, not chocolate drink mix
2 teaspoons baking soda
1 teaspoon or less, salt
2 cups water
3/4 cup cooking oil
2 Tablespoons vinegar
2 teaspooons vanilla
Beat until well mixed, 2 or 3 minutes. Pour into greased and floured 13 x 9 inch pan. (May use chocolate drink mix instead of flour in the pan.) Bake at 350 degrees F. for 35 to 40 minutes. Cool and frost.

Mayonnaise Cake
1 1/2 cups sugar
3 cups flour
6 Tablespoons cocoa
3 teaspoons soda
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 cups mayonnaise
1 3/4 cup water
1 1/2 teaspoon vanilla
Mix well and pour into greased and floured 13 x 9 pan and bake at 350 degrees F. for about an hour. If you plan on splitting the cake and filling, instead of the greasing and flouring the pan, line the pan with waxed paper and lightly spray or grease it, before pouring in the batter. Cool in the pan about 5 minutes, then turn the cake out onto a rack and peel off the paper and allow the cake to finish cooling.
After the cake has cooled, I usually split the cake into two layers and fill with chocolate pudding, put the 2nd layer on it and top with chocolate whipped cream. I usually stir the cream into the remains of the chocolate pudding after filling the center to make the chocolate whipped cream.

Chocolate Pudding Cake
3/4 cup sugar
1 1/4 cup flour
2 Tablespoons cocoa
2 teaspoons baking powder
dash of salt
2 Tablespoons oil
1 Tablespoon vanilla
1 cup milk
Mix well, pour into a 9 x 9 pan, then mix:
1 3/4 cup brown sugar
1/4 cup cocoa
1 1/2 cup hot water
Pour over the cake batter and do not stir. Bake at 350 degrees F. for 40 to 45 minutes. Serve warm. Really good with vanilla ice cream.
